Always wanted to know how to make your favourite Japanese dishes? Join this fun and hands-on cooking class to get you on your creative journey. After you've studied the recipes and bought the necessary ingredients and equipment, tune into a live Zoom session with an expert chef. You will uncover the secrets behind some delicious and healthy Japanese dishes like mushroom miso soup, cucumber with ginger dressing and salmon teriyaki. Most ingredients can be found in your kitchen cupboard already, with only a few core elements you may need to run to the shop for. At the end of the class, sit down and enjoy all the fruits of your labour.

What to bring:

  • MUSHROOM MISO SOUP: 700ml cold water, two dried shiitake mushrooms (13g), 75g mixed mushrooms, one spring onion, sliced thinly 20g tofu, chopped 3x3 cm kombu (optional)
  • CUCUMBER WITH GINGER DRESSING: one Lebanese cucumber sliced thinly, half tsp salt, 3g wakame rehydrated in cold water for 30 seconds, one tbsp toasted sesame seeds, three tbsp rice wine vinegar, two tbsp raw sugar, one tbsp soy sauce, one tsp grated ginger
  • SALMON TERIYAKI: 200g salmon skin on, two tbsp Japanese soy sauce, two tbsp mirin, two tbsp cooking sake (optional: you can use two tbsp of mirin instead, in which case, omit the raw sugar, two tsp raw sugar, one tsp of vegetable oil, toasted sesame seeds

Session Length

  • The online class is run over two hours, you may start the course at any time when you have the recipes and class notes
  • Online classes are available on select Wednesdays and Saturdays. You will receive a Zoom link to access the class

  • To get started, make sure you have the following equipment: Sharp knife, cutting board, sturdy saucepans, large pots, a steamer set of small bowls, food processor or a mortar and pestle, roller, spatula, tong, serving spoon, measuring cups and a scale
  • In the case of special dietary requirements, the provider can suggest suitable substitutions
