Learn the fundamentals of Thai ingredients and flavours during a fun and hands-on online cooking class. After you've studied the recipe and bought the necessary ingredients and equipment, tune into a live Zoom session with an expert chef. They'll teach you how to find the perfect harmony between sweet, sour, hot and salty as you whip up a few healthy Thai dishes. At the end of the class, sit down with your new virtual foodie family and enjoy the fruits of your labour.

What to bring:

  • KAENG THAI CURRY PASTE: 2-8 chillies (add to your spice tolerance), three large cloves of garlic, 1-2 shallots, minced finely (can replace with 1/2 red onion), two coriander stems and roots attached, one stalk of lemongrass (bottom part only, minced finely), three kaffir lime leaves (minced finely), 2x2x2cm galangal (skinned, minced finely) 2x2x2cm ginger (minced finely), optional: 1/4 lime zest, one tsp ground turmeric, one tsp ground cumin, one tsp ground coriander, one tsp salt and one tsp raw sugar
  • NAM TOK WATERFALL BEEF SALAD: 200g beef rump, sliced one tbl vegetable oil, one tomato, sliced one Lebanese cumber, julienned one spring onion, sliced diagonally six green beans, sliced diagonally (or two long beans & two green beans) 1/2 carrot, julienned one small red onion, sliced 1/2 yellow capsicum, sliced one tsp fish sauce, one tbl soy sauce, one tbl raw sugar, one tbl chilli paste or chopped chilli (add less if you like less heat), 1/2 lime for serving. Optional: lettuce leaves, sliced wombok, roasted peanuts, crispy shallots, mint, coriander, Thai basil
  • KAENG KHIA WAN GREEN CURRY CHICKEN: 1-2 tbl vegetable oil, two tbl fresh curry paste (made in the previous recipe), 500g chicken thigh or breast, sliced 100g green beans (stems removed & cut into 3cm batons), 1/2 capsicum cut into 2cmx2cm, 1.5 cups pumpkin diced into 2cmx2cm, 1/2 an eggplant cut into 2cmx2cm, 400ml coconut milk, up to 300ml water, two teaspoons of fish sauce, two teaspoons raw sugar. Optional: Thai basil leaves, coriander leaves, lime juice, steamed rice for serving

Session Length

  • The online class is run over two hours, you may start the course at any time when you have the recipes and class notes
  • Online classes are available on select Saturdays at 2pm. You will receive a Zoom link to access the class

  • To get started, make sure you have the following equipment: Sharp knife, cutting board, sturdy saucepans, large pots, a steamer set of small bowls, food processor or a mortar and pestle, roller, spatula, tong, serving spoon, measuring cups and a scale
  • In the case of special dietary requirements, the provider can suggest suitable substitutions
