The instructor demonstrated how simple it can be with the right preparation and gave some helpful tips on handling the pastry and storing it. I am only giving 4 stars because I think we could have done one less dough (either the sweet short crust or the shortbread) and instead spent more time on how to use the pastry once it’s made. Even just making a sausage/spinach ricotta roll with some premade puff would provide a more rounded experience, particularly for a beginner.

The teacher definitely knew he stuff but I struggled with the pace a bit as you jump between techniques and pastry types so it's easy to get confused. Would have liked more comprehensive notes. They’re quite high level so notes will help for reference later but it’s hard to write notes while paying attention to what you have to do. Some notes on how to use the pastry (e.g. use the flaky pastry for quiches, the puff for pie lids etc.) would have been helpful. I would recommend the course to those who have some knowledge/experience (even if minimal) in baking as it definitely helped. Those who have never baked or worked with pastry before may struggle as may not have the confidence to later use the pastry they made.
