Discover the art of poultry mastery in this full-day cooking workshop, guided by expert chefs. You’ll begin with learning the professional butchery techniques, including how to break down whole chickens, ducks and quails. Next, explore how to create rich stocks and flavourful sauces that elevate every dish. Using premium Victorian produce, you’ll gain confidence working with classic cooking methods such as roasting, braising, and poaching.
Throughout the day, you'll work in small groups inside a modern, purpose-built teaching kitchen, and enjoy cultural storytelling from your mentors between cooks, bringing each recipe to life. After the final dish is plated, sit down with the other participants for a shared meal with a glass of wine or beer and savour what you have created. This cooking class will leave you with new skills, professional tips, and a recipe booklet to continue your culinary journey at home.

Please dress in smart casual clothing. Closed-toe footwear is essential (flat soles are recommended).
