Mornington Peninsula's Jimmy Rum Distillery is the setting for this deep-dive into rum production for serious rum-lovers. Led by head distiller and founder James McPherson, set out on an interactive tour of the distillery, the first in Victoria dedicated solely to rum. Sample the rum at different stages of production and see how the flavour of the spirit changes over the distilling run. You'll also learn basic distilling principles such as heads, hearts and tails cuts and blend your own 700ml bottle of Silver rum to take home. Along the way, experience a tasting of the JimmyRum range, lunch on cheese and charcuterie boards, and kick back with a handcrafted cocktail in the moodily lit bar. It's home to Matilda, a gleaming 1500 litre copper still.
