Enjoy a 3 hour handmade sausage making class, followed by lunch and a glass of Kelpie Bridge wine. When you have had time to digest the delicious fare, unwind with a relaxing afternoon soaking in one of 20 thermal hot spring pools.

Ever wondered how the Italians and Germans make such great sausages? This is the place to learn the art of fresh sausage making. You will be shown everything about bratwurst sausage making; from the best cuts of meat to use, how to grind meat, herbs and seasonings to use, how to fill natural sausage casings and then explore different ways to cook sausages. You will use spices and fresh garden herbs to individually season your own batch of sausages.

Once the hard work is done you sit down, admire the view of the vineyard, kitchen garden and ducks on the dam whilst enjoying the tantalising produce you just made with a glass of Kelpie Bridge wine. Following lunch you can then enjoy entry to over 20 bathing pools in the Bath House at Peninsula Hot Springs including Hilltop pool with 360 degree views, reflexology walk, Turkish steam room, sauna, cave pool, family bathing area and many more.

Session Length

  • Please arrive for course registration at 8.50am
  • Course commences at 9am and concludes at 12noon followed by a wine tasting, lunch and hot springs
  • Classes are run on Saturdays only
  • Closed Christmas Day and Boxing Day
