This five course degustation menu created by head chef Dan Jarrett is designed to be shared by the whole table, respecting the traditional custom of the cultures they draw influence from. Combining sweet, sour and spicy flavours, you'll enjoy fantastic fare such as cured ocean trout served with yuzu kosho crème fraiche, furikake, wakame and caviar, and pan seared duck served with fried Sichuan style long beans, lychee, scallop braised cabbage, tamarind and hoi sin sauce.
