In this Taste of Melbourne cooking class we focus on using fresh, local, seasonal food, cooked with the techniques gained from many different cuisines, focusing on enhancing the natural food flavours. Learn to cook with an expert chef in a small, hands-on cooking class, with many hints along the way.

Australian cuisine is all about seasonal freshness, delicate, strong, robust flavours and textures; cooking for taste, cooking simply and thereby enhancing the natural food flavours, so our food looks and tastes delicious. Learn to create and develop a cooking style that is natural and true for your own tastes. You'll be encouraged to celebrate the richness and diversity that our food offers us and to enjoy cooking for your family and friends. Learn to cook such dishes as vichyssoise of oysters with oyster beignets, verjuice jellies, pan seared tuna with tuna tartare , confit of tomato petals with pepper and pesto flavoured soft curd goats’ cheese quenelles, seared scallops with lemon and chilli jam, tomato tarte tatin, citrus cured salmon and dill gravlax, honey glazed and roasted quail, herb crusted wagyu beef, rare roast beef with horseradish cream, meringue roulade with passionfruit and raspberries, champagne jelly with berries, lime and limoncello tart with lemon pousset and macadamia biscotti.
Day cooking classes are from 8:45am – 3.30pm on Thursdays and Saturdays and occasional Sundays.
You will start with refreshments and a chat about the cooking day, the menu, the techniques and principles of cookery; then cook until approximately 12.30pm to 1pm and dine until around 3.30pm.
Classes are limited to 9 participants with one chef plus a kitchen steward assistant.
Participants are asked to wear covered in, comfortable shoes, for safety reasons.
This experience offers a unique hands-on cooking class day, learning to cook whilst experiencing the glorious view of Port Phillip Bay. The class culminates with your wonderful luncheon, served at a beautifully set table, with local wine and interesting conversation. You feel like you are at a private dinner party. All classes cook appetizers, soups or entrées, main course and dessert.
All participants must be over 18 years, unless accompanied by a participant who is an adult.
